International Cuisine Events

These bi-annual food tasting events are in a similar vein to Mahecas UK's Cultural Events. Several very successful events have been held, mainly in Boston, Lincolnshire. In the past these events have also led to recipe booklets being produced and sold.

As suggested in the title, the dishes at such events are truly multinational. There are usually many dishes from Malawi, as well as others from as far away as Sri Lanka, Mexico, West Indies and the slightly nearer countries of Scotland and France to name but a few. Many thanks must go to Dr Milika Matiti who has worked very hard organising such events in the past. Also thanks to the many people who supplied dishes for the rest of us to try.

To tempt your taste buds, here is a recipe from Malawi for Steamed Bananas:

  • Line a 4-quart pan with 4 to 6 Banana Leaves so they overlap and cover the base.
  • Place 8 whole, peeled, under-ripe bananas in the pan.
  • Sprinkle with 1 teaspoon salt, (and 1/2 cup soft brown sugar*).
  • Fold the edges of the banana leaves over the bananas, adding more leaves if necessary, to completely cover them and seal them in.
  • Add 1 cup of water carefully, (pouring down the side of the pan).
  • Cover the saucepan tightly, and simmer slowly for 1 hour.
  • Remove leaves, and place bananas on a serving plate.
  • Drizzle melted butter over bananas when serving.
    NB: When banana leaves are not available wrap bananas with aluminium foil, and bake in oven at 200C.
    *In Eastern Africa this dish is usually cooked without the sugar and served as a vegetable. Western cultures often add the sugar and serve as a dessert.
